My all time favourite!

As the cooler mornings approach us, what better time to swap those summery smoothie bowls for a cosy bowl of porridge to kick-start your day?

Ingredients

  • 1 cup rolled oats
  • 1 cup of brewed chai tea
  • 1 cup of plant milk (organic soy, almond, oat etc.)
  • 1 tsp cinnamon
  • 1 ripe banana (the more spots on it the better!)
  • Optional: 1 tbsp sweetener of choice (coconut syrup/sugar, rice malt syrup, pure maple syrup)

Method

  • Place your oats in a saucepan along with the chai tea, plant milk, and cinnamon.
  • Using a fork, mash in ½ - 2/3 of your banana. (slice the rest to place on top of your porridge)
  • Turn the stove on to medium heat, stirring your oats regularly. Once it starts to boil turn heat to low.
  • Continue to stir oats on low heat until the liquid has absorbed and the oat mixture has thickened to a porridge consistency. Turn off heat. Stir in sweetener if you prefer a sweeter tasting porridge.
  • Serve porridge in a bowl and top with remaining banana slices, berries and even some nut butter/tahini if you like!
