Our Latest Obsession – Peanut Butter & White Chocolate Fat Fudge

When it comes to eating healthy, I’m a firm believer that it shouldn’t be a struggle! It should come naturally and easily and add more to your life than it takes away. And when it comes to diet, a life without treats and chocolate is just not one I want to live. I grew up in the kitchen, it’s my happy place and I love making food for myself and my friends and family. Thankfully my cooking has evolved from sugar filled cupcakes and treats to more wholesome ones that I can enjoy every day (yep, every day!).

I generally eat a diet super low in sugar and fairly low in carbohydrates too. This is what works for me, and I find I have much more energy this way, less hunger, more mental clarity and a stable mood. For this reason, I’ll always opt for fat over sugar – this means if I’ve got the choice of a cold-pressed green juice or a coconut milk latte, I’ll go for the latter. I’m not anti-fruit or anti-carb at all (in fact, I’m not anti-anything and if you follow me on social media I hope you know this already!), but when it comes to treats, I keep them low in sugar and high in fat because this is what works for me. Above all else, no matter what kind of food you gravitate towards, these TASTE damn good too! Sometimes I think we get so caught up in diets and rules that we forget to actually enjoy what we’re eating.

I’ll munch on a square or two of these fudges as my #lunchdessert almost every day.

Being high in fat, they help with satiety and staying full until dinner. For some reason I find coconut oil, being a saturated fat, to have more of an effect on my appetite than other unsaturated fats (like olive oil, avocado, nuts – which I love too!). Since I’ve stopped snacking (which by the way has done wonders for my digestion), I use these fudges as a little tool to make it easy to get through to dinner without my energy crashing or experiencing those dreaded hunger pains.

Perhaps my favourite thing about having a little healthy low-sugar treat every day is that when someone offers me some kind of sugar-filled junk food, I have no desire to eat it! That’s when you know what your eating is right for you. As I mentioned earlier, it comes easily and naturally and involved no guilt or stress or anxiety around food. My current favourite fatty dessert is white chocolate peanut butter fudge! Peanut Butter White Chocolate Fat Fudge

Prep time: 15 minutes Set time: 1 hour

INGREDIENTS

● 1/4 cup coconut butter
● 1/4 cup cashew butter
● 2 tbsp cacao butter
● 2 tbsp coconut oil
● 1 vanilla bean, seeds scraped out
● 10–12 drops liquid stevia, or to taste (optional)
● 1⁄4 cup natural peanut butter

METHOD

1. In a small saucepan over a very low heat, melt the coconut butter, cashew butter, cacao butter and coconut oil.
2. Remove from the heat and stir in the vanilla and stevia.
3. Pour into a baking paper lined tray or silicone moulds.
4. Swirl in the peanut butter and set in the fridge or freezer until ready to be sliced.
